Delicious Enchilada Style Burritos Recipe with Beans, Rice, and Cheese


Enchilada Style Burritos are a tasty and easy-to-make meal that will satisfy any cravings for Mexican cuisine. These burritos consist of tortillas stuffed with cheese, enchilada sauce, black beans, and rice, and are served with a variety of delectable sides. Step 1: Start by preparing the tortilla dough and setting it aside for 30 minutes. Alternatively, you can use store-bought tortillas. In a pan, add butter or oil and sauté the raw rice until it develops a nutty flavor. Add in the green chilies, cilantro, and water (according to the package instructions) and cook the rice. Finally, add lemon juice and set it aside.

Step 2: In a separate pan, heat 1/2 tablespoon of butter or oil and sauté the chopped onions until they become translucent. Add in the black beans, red chile powder, and drizzle some water. Cook for 2-3 minutes.

Step 3: Preheat your oven to 350°F and set it on broil mode.

Step 4: Divide the tortilla dough into two equal parts and roll them out to the size of your non-stick pan, tava, or griddle. If you’re using store-bought tortillas, heat them on a griddle. Cook the tortillas on both sides until they have a light golden color.

Step 5: Place two tortillas in separate round baking pans. Add the rice at the center followed by the black beans mixture. Pour in the enchilada sauce and Mexican cheese blend. Roll the tortillas and place them fold side down. Pour the remaining enchilada sauce on top of the tortillas and sprinkle with the remaining cheese. Broil in the oven for 3-5 minutes or until the cheese melts and the sauce bubbles.

Step 6: Remove the burritos from the oven and serve hot with sour cream, salsa, lettuce, guacamole, or any other sides of your choice.

Notes:

  • You can add any meat of your choice, shrimp is awesome, or add some leftover pork or chicken from last night’s dinner!
  • You can use store-bought tortillas for convenience.
  • Saute the rice first to give it a nutty flavor, so be sure not to skip that step.
  • You can use any type of rice, but jasmine rice is recommended.
  • Mexican cheese blend consists of some combination of shredded Cheddar, Monterey Jack, Asadero, and Queso Blanco, but you can use any cheese or mixture of cheeses that you prefer.
  • You can substitute black beans with pinto beans.
  • Be sure to drain and wash the canned black beans to reduce the sodium.
